不銹鋼按主要化學組成可分為鉻不銹鋼、鉻鎳不銹鋼、鉻錳氮不銹鋼、鉻鎳鉬不銹鋼以及超低碳不銹鋼、高鉬不銹鋼、高純不銹鋼等；按鋼的性能特點和用途分類，如耐硝酸（硝酸級）不銹鋼、耐硫酸不銹鋼、耐點蝕不銹鋼、耐應力不銹鋼、高強度不銹鋼等。按鋼的功能特點分類，如低溫不銹鋼、無磁不銹鋼、易切削不銹鋼，超塑性不銹鋼等。通常以金相組織進行分類。按金相組織分類為：鐵素體(F)型不銹鋼、馬氏體(M)型不銹鋼、奧氏體(A)型不銹鋼、奧氏體-鐵素體(A-F)型雙相不銹鋼、奧氏體-馬氏體(A-M)型雙相不銹鋼和沉淀硬化(PH)型不銹鋼。
